Acacia blend is our celebration of the speciality coffee world, featuring a seasonal rotation of the cleanest and sweetest coffees from our favourite farms and producers. With its delicate, sweet, and fruity flavours, Acacia works well for both espresso and brewed coffee alike. Components rotate seasonally, bringing to you the freshest beans from our producing partners around the world. This new version of Acacia Blend currently showcases two sparkling washed coffees from Central & South America, giving as a result a mild and unique brew particularly enjoyable for black coffee lovers.
The first component called Monte Albán coffee comes from organic-certified small farmers near Oaxaca, Mexico. Named after nearby Zapotec ruins, Monte Albán was a major Mesoamerican city for over a thousand years. While specialty coffee is new to the region, growers are eager to improve, focusing on varieties like Bourbon and Typica. The coffee features notes of yellow fruit, almond, citrus, vanilla, and honey, with a dominant sweetness, mild acidity, and a clean finish - ideal for filter, pour-over, or espresso.
This coffee was processed using the traditional washed method. Ripe cherries are handpicked, then depulped to remove the skin and most of the fruit. The beans, still covered in sticky mucilage, ferment for 20 - 24 hours as natural enzymes break down the residue - key for clarity and brightness. Afterward, they are washed clean and dried on raised beds, patios, or in dryers until reaching 10 - 12% moisture content.
You can enjoy the flavours of milk chocolate, caramel with marzipan aroma. The fruit notes such as golden apple, orange and strawberry with the honey sweetness emphasizes the syrupy body.
To round out the blend, we added a vibrant coffee from Peru - famous for its high-grown, beautifully processed beans with a perfect mix of clarity, acidity, and body.
Ukuku is a character from the Andean mythology. The folkloric story says that Ukuku was born from the union of a woman with a spectacled bear and the creature is half man half bear. The bear fell deeply in love with the lady and decided to hold her captive. The lady became pregnant and when Ukuku was older she told him that his father - the bear - was keeping her from her liberty, so Ukuku decided to kill his father to let his mother in liberty. Ukuku inherited wisdom from his mother and strength from his father. This character is in charge of protecting the community and the environment as well as purifying the lands with ice brought from the snowy peaks of the region to hope for great harvests. Ukuku, a proper guardian of Andean customs and spirituality connected to Pachamama (Mother Earth).
The producers who currently contribute to Ukuku are from Jaén and Cutervo, of the northern area of Cajamarca in Peru. In 2019, Caravela started working with 20 producers of Cutervo and nowadays, the quality team is working with the producers on the higher elevations of Jaén as well.
Cutervo (1550 masl) and the higher elevation areas of Jaén (2000 masl) are rich in biodiversity, with clay soils and permanent rain. The farms are close to the National Natural Reserve of San Andrés and Huamantanga Forest which create ideal microclimates for the production of specialty coffee.
Ukuku is a blend of caturra, bourbon and catuai varieties. The flavour notes of zesty lime and honeydew melon are dominating with subtle tones of milk chocolate. You can enjoy the aroma of elderflower with sweet honeycomb.
You can expect crisp acidity with the notes of juicy Honeydew Melon with bright orange notes with an Elderflower finish.
Simply said: this new Acacia blend is complex and balanced coffee: enjoy the subtle floral aroma of Elderflower, then notes of Golden Apple, Strawberry, Orange, and Zesty Lime all wrapped in a juicy texture with floral tea-like aftertaste.
