Héctor Estéban Sánchez is a dedicated specialty coffee producer from the renowned Tarrazú region of Costa Rica, where he and his family cultivate coffee at Bajo Canet, a high-altitude farm nestled between 1,700 and 1,850 metres above sea level. Combining exceptional terroir with meticulous farming practices, Sánchez focuses on producing small, traceable microlots that showcase the vibrant character of Costa Rican coffee. This Bach lot is processed using his signature Raisin Honey method—an innovative variation of the traditional honey process in which whole cherries are first dried on raised beds until they begin to resemble raisins before being carefully depulped and dried further. This extended drying concentrates the fruit sugars and enhances sweetness, creating a remarkably expressive cup with layered notes of ripe berries, dried fruit, floral aromatics and a rich, syrupy body, while maintaining the bright, elegant acidity for which Tarrazú coffees are celebrated.
