A talented smallholder farmer and a close family friend of Andrea Costa, Patricia took over the management of her family business with the support of her son, Pedro, and together they have built a reputation for outstanding quality and innovation.
This lot of Mundo Novo is a shning example of that.
Once picked, the fruit is left intact, like a normal naturally processed coffee, before being piled into large pyramids. The cherries begins to macerate in the centre of the mound, then it is rotated and re-pilled to allow uniform drying. It is these mounds, which look like tiny volcanoes, that give this form of processing its name.
It is a labour-intensive process as needs processing staff to keep hand rotating it and putting it in the pyramids then flattening and repeat but creates a really distinct profile - reminding us of creamy Nutella, raspberries and sweet and boozy brandy snaps.
