Process:
The journey begins with Pink Borbon cherries undergoing a 48-hour pre-fermentation in sealed containers, a step that builds depth and character. Once depulped, the beans — still coated in their sticky mucilage — are inoculated with organic dried, ground banana. This unique infusion creates a creamy body with delicate banana undertones.
The beans are then left to ferment in this banana-mucilage mixture for five days, developing a layered complexity. Post-fermentation, they are gently pre-dried on open patios under the sun before being finished in static silos for consistency. Finally, a 30-day stabilisation period allows the flavours to harmonise, resulting in a cup that is both vibrant and refined.
History:
Located in the southern region of Huila, Colombia, the municipality of San Agustín combines agricultural value with cultural significance, recognized internationally as a UNESCO World Heritage Site. Positioned at an elevation of approximately 1,750 meters, the area provides optimal growing conditions for coffee cultivation.
Producers in this region manage a diverse range of varieties, including Pink Borbón, Caturra, Colombia, and Castillo. Surrounded by dense forest ecosystems, these farmers integrate traditional practices with modern processing techniques, supported by collaborative initiatives designed to improve overall quality and enhance flavour profiles.
