About the producer
High up in the Ahuachapán mountains of western El Salvador, Finca Noruega is part farm, part classroom, part quiet rebellion against knackered soil and low standards. Forty-three manzanas planted with everything from bourbon to geisha, all under the watch of Sigfredo Corado, a retired agronomy professor who could have put his feet up but didn’t.
The farm sits inside the Renacer programme, a proper field school backed by Raíces and Catholic Relief Services. Twice a month, small and mid-size producers turn up to get stuck into better farm management. Not buzzwords. Actual graft. Soil health first. Right source, right dose, right place, right moment. Sixty growers testing ideas on real plots before taking them home to their own land.
This lot is 100% pacamara. Selectively picked, properly handled, then processed at Beneficio San Rafael. No shortcuts.
About the name
Named after the Caslon Letter Foundary, whose chimney still stands proud here in HW. A reminder of a time when publishing books and pamphlets was a craft that took time; when fonts were little blocks made of iron, that would be painstakingly set, covered in ink and then printed onto endless reams. The factory itself? Flattened for flats. Classic Hackney Wick. But the London Centre for Book Arts lives nearby, teaching almost forgotten printmaking crafts.
It’s a banger, try it across every brew method, it slaps.
