Produced in collaboration with CATA, this rich Castillo lot carries high cultural importance, ethical value, and excellent quality, and is the result of work by 24 multi-generational small-scale farms in one of Colombia’s oldest towns.
This project highlights new opportunities for their exceptional coffees to be showcased worldwide by working hand-in-hand with local producers in training, quality control, and access to fair, sustainable trade, while preserving biodiversity and traditional practices.

From a small selection of farms in southern Huila, Timaná stands as one of Colombia’s oldest towns, rich in history and tradition.
In this community, coffee is more than a crop, it is a way of life passed down through generations of farming families. The collaboration with Timaná began with a shared vision to honour the region’s heritage while creating new opportunities for its exceptional coffees in global markets.
Through Cata Export, support is provided to local producers in the form of training, quality control, and access to fair, sustainable trade. The coffee produced here reflects the dedication of dozens of smallholder farmers who cultivate their land with great care, preserving biodiversity and traditional practices while also embracing innovative processing methods.
Process
The process begins with careful manual selection of ripe cherries, ensuring that only the highest-quality fruit is used. After pulping, the coffee undergoes 48 hours of controlled oxidation, a fermentation step that enhances both complexity and clarity in the cup.
The lot is then dried with meticulous attention to detail, preserving its vibrant character and distinctive flavour expression.
