This March, we’re bringing a seriously juicy and expressive filter coffee to the table with Strawberry Laces. Grown in Colombia and roasted light to let its vibrant character shine, this is a coffee for those who love a cup bursting with sweetness, clarity and a little bit of fun. March brings us a coffee that is playful, vibrant and packed with personality. A perfect fit for this month’s Coffee of the Month.
Our Coffee of the Month series gives us the opportunity to explore wonderfully diverse coffees from around the world while shining a light on the growers and communities behind each cup. For March’s edition, we’ve chosen a familiar and much-loved lot from Colombia called El Diviso, produced by Nestor Lasso and his brother Adrian.
These third-generation coffee farmers have always prioritised quality over quantity, helping to ensure coffee farming remains a viable and respected livelihood for generations to come. Motivated by his passion for coffee and the desire to build a brighter future, Nestor took over the family farm with his brother at just 25 years old, shifting the focus toward producing exceptional micro-lots and refining their post-harvest methods with real care and precision.
COLOMBIA - FINCA EL DIVISO, PITALITO
Finca El Diviso is a collaborative project initiated by neighbouring coffee producers striving to cultivate and process exceptional, high-scoring coffee. The farm is owned by Nestor Lasso and Jhoan Vergara of Las Flores Farm, and is located in Pitalito at around 1,800 metres above sea level, ideal conditions for producing specialty coffee with clarity, sweetness and complexity.
This particular lot is a Caturra varietal and underwent a double anaerobic fermentation. After harvest, the cherries were first fermented anaerobically for 20 hours, followed by another 16 hours in smaller batches. After depulping and washing, the coffee was submerged in water and leachate from previous harvests for 18 hours before being mechanically dried.
The result is a beautifully expressive cup with bright tropical sweetness, floral character and loads of juicy personality.
