Colombia Zuly Paya

Meet Zuly Paya. She farms Pink Bourbon on a steep hillside called El Mirador, 1,950 metres up in Nátaga, Huila — and she's also the past-president of her area's rural women's board, backing other women farmers as they grow. This lot goes through a careful double fermentation (24 hours whole cherry, then 48 hours after depulping) before a slow raised-bed dry, and it shows: apricot, bergamot, peach and jasmine in the cup. Arcadia brought over El Mirador's entire 2026 production, so once it's gone, it's gone.
