ORIGIN NOTES
Sugarcane Ethyl Acetate (E.A.) processing — commonly referred to as a natural decaffeination method — uses a gentle combination of steam and ethyl acetate to remove caffeine while preserving the coffee’s character and sweetness. Ethyl acetate itself is a naturally occurring compound derived as a by-product of sugar and wine fermentation, making it an ideal solvent for maintaining a full and expressive flavour profile.
This Sugarcane Decaf is sourced from Café Cumbres, a group of coffee farms located in Ciudad Bolívar, Antioquia. Their focus centres around exceptional cup quality, environmental and economic sustainability, and complete transparency throughout the supply chain.

OUR BREWING SUGGESTIONS
espresso
This is our go-to decaf for our wholesale customers for espresso. It has amazing flavour and consistency. We recommend using 18 g of coffee as a starting point for a 36g shot in around 28-30 seconds. Expect a full bodied and rich espresso.
filter
As a starting point use a ratio of 30g of ground coffee with 500ml of water at approximately 95degC. Wet the bed of coffee with approximately twice its weight in water, and make sure all the grounds are equally saturated. Add the remaining water in 3 equal measures, with all water added before 3 mins. Total brew time should be around 3:30 - 4:00 minutes
