Red Tenth Project
Created by TOH-winning producer Demelash in collaboration with Hansun Coffee, the Red Tenth Project is an extremely selective series of experimental micro-lots.
Only fully ripe red cherries are accepted, followed by continuous sorting throughout processing to remove even the most subtle defects. Approximately 10 kg of ripe cherries produces just 1 kg of green coffee, giving the project its name: “Red Tenth.”
LUNA Processing
The cherries are floated overnight in water below 4°C before being sealed in fermentation tanks designed to slowly release carbon dioxide. As part of the LUNA process, they are then fermented for 72 hours in a cool, dark room at the top of the mountain.
After fermentation, the cherries are transferred overnight to shaded raised beds and slowly dried for 23 days. This carefully controlled process is designed to build complexity while maintaining clarity and structure.
