Ethiopia Yirgacheffe is revered not only as the birthplace of coffee but also for its consistently high-quality beans that are cultivated in the same traditional manner that has been maintained since the 1500s.
The beans are primarily grown in the shade of other trees, known as forest-grown coffee, or in gardens alongside various crops with minimal human intervention. This method preserves the natural environment and enhances the coffee's complex flavour profile.
Located in southern Ethiopia, Yirgacheffe boasts fertile soil, high elevations ranging from 1,700 to 2,200 meters above sea level, and a tropical climate characterized by distinct wet and dry seasons. These conditions are ideal for coffee growing, contributing to the beans' unique attributes.
The coffee is processed using the washed method, where it is first machine-pulped and then undergoes anaerobic fermentation before washing. This careful process ensures a clean cup with bright acidity and a delicate body.
After washing, the beans are dried on traditional raised beds for seven to ten days, which promotes even drying and optimal airflow. This heirloom varietal coffee is known for its signature bright acidity, delicate body, and floral aroma, offering distinct flavours of citrus, tropical fruit, berries, and floral notes with a tea-like body that is both bright and balanced.
Sourced from the Agaro dry milling station, the Ethiopia Yirgacheffe represents the collective effort of 498 smallholder farmers. Each bean is handpicked at peak ripeness to ensure the highest quality. The coffee is roasted carefully to highlight its intricate flavours, without too much acidity, making it ideal for all brewing methods where you can deconstruct the individual flavours with every sip.
