At our roastery, we’re always drawn to coffees that tell a deeper story, and this Ethiopian lot from Ephtah Specialty Coffee is one we’re especially excited to share. Grown in the highlands of Gedeb, the coffee is shaped by Ethiopia’s distinct seasonal rhythms — from the long dry Bega season that allows the cherries to mature and dry beautifully, to the Belg and Krempt rains that nourish the trees throughout the growing cycle. Ephtah works closely with local farmers and communities to build a more sustainable and collaborative coffee supply chain, with a strong focus on supporting the women who play such an important role in every stage of production. At the Lalesa washing station, cherries are carefully selected from nearby farms, floated to remove lower-quality fruit, and slowly dried on raised beds for up to two weeks under the shade of Enset trees, also known as false banana trees. The result is a coffee that not only reflects the landscape and culture of Gedeb, but also the care, patience, and craftsmanship behind every step from harvest to cup.
