Expect flavours of green apple, cherry, Assam tea, mint and brown sugar, with a gentle, tea-like finish that’s both bright and refined.
Hidden high in the Huehuetenango region, this coffee comes from the Todos Santos ASODIETT cooperative, a small group of 55 producers farming the steep hillsides around the Mayan village of Tuiboch. Working between 1,400 and 1,850 metres, these farmers grow Bourbon, Caturra and Pacamara varietals of Coffea Arabica, carefully hand-picking and washing their cherries during the short harvest season from January to March.
The unique microclimate, shaped by warm winds from the Río Ocho valley and long, late rains, allows the cherries to ripen evenly, creating a sweet and balanced cup. After being washed and dried on small patios and rooftops, the coffee is sent to Los Volcanes’ Beneficio La Esperanza in Antigua for final preparation and export.
