The combination of an Ethiopian varietal and Brazilian terroir creates a remarkable cup profile that showcases the best qualities of both origins.
Located in the Cerrado Mineiro region since 1977, Guima Café is produced on the
São Lourenço and Brasis farms, in the municipalities of Patos de Minas and Varjão
de Minas. The farms span plains and valleys at an average altitude of 1,030 metres,
covering a total of 1,300 hectares. With an annual production capacity of 2,100
tonnes of coffee, Guima Café has reinforced its commitment to sustainable
production by becoming the fourth farm in the world to receive Regenagri
certification for regenerative coffee farming.
We were lucky enough to visit Guima Café in September 2024 and witness their
practices firsthand. While there, we had the opportunity to cup an incredible
washed Yirgacheffe varietal—a cultivar originally from the Yirgacheffe district of
Ethiopia. Think dark chocolate undertones from Brazil, combined with the classic washed Ethiopian malic acidity in the form of peach and rhubarb.
Roast Level: light-medium
We roast the Guima to a light-medium level that really showcases its complexity and sweetness. To maximise sweetness we recommend letting the coffee rest for at least 14 days after roasting.
