The Founder’s Hunt
Las Margaritas Honey Geisha enters the Mythic class of Roastersaurus as a Founder release, unveiled to mark Diana Johnston’s fortieth year. Mythic coffees represent the rarest expressions in the Roastersaurus world, singular lots that appear once and never return in quite the same form.
This release is available now as a preorder and will ship by 27 March, arriving in time for everyone to enjoy it together for Diana’s birthday on 3 April.
This Geisha comes from Las Margaritas, one of the celebrated estates of Café Granja La Esperanza in Colombia’s Valle del Cauca. Known globally for cultivating some of the most expressive and experimental coffees in specialty, the farm produces varieties that balance clarity, sweetness, and aromatic precision.
This honey processed lot reveals a lush side of the variety. Rather than delicate restraint, it unfolds in waves of tropical fruit, floral lift, and silky sweetness. Rich yet poised, indulgent yet precise.
The Farm
Las Margaritas sits in the municipality of Caicedonia in Valle del Cauca, Colombia. The farm ranges between 1,648 and 1,852 meters above sea level, where warm tropical conditions and mountain elevation create an ideal environment for specialty coffee cultivation.
Café Granja La Esperanza has built an international reputation for pushing the boundaries of coffee production. Their work combines meticulous agronomy, rare varieties, and experimental processing techniques to produce coffees that continually redefine what the cup can be.
The Geisha variety thrives here, expressing both aromatic elegance and layered sweetness through the unique conditions of the region.
The Process
This lot follows a carefully controlled honey process designed to build sweetness and texture while preserving clarity.
Cherries are first harvested at peak ripeness and floated in water tanks to remove any defects. Their sugar levels are measured before fermentation begins in open tanks for 18 hours. After this stage the cherries are pulped and taken through a second 72 hour aerobic fermentation, allowing the fruit sugars to continue influencing flavour development.
Unlike washed coffees, the beans are then moved directly to drying without removing the remaining mucilage. They are dried slowly in mechanical dryers for three to five days at 38°C, before resting in climate controlled warehouses to stabilise and preserve quality.
The result is a coffee that carries both the perfume of the Geisha variety and the lush sweetness created through the honey process.

Strawberry candy opens into guava and papaya, moving through custard apple and banana with white melon and apricot, lifted by jasmine and lavender florals and a silky honeyed sweetness.
