This exceptional coffee comes from Mundayo village, in the Refisa municipality of Nensebo District, in Ethiopia's Oromia Region. It is grown at elevations of 1,945 to 2,100 metres above sea level, benefiting from the unique microclimates of this high-altitude terrain. The lot is made up of heirloom varieties.
This lot uses an improved washed process, a carefully executed method designed to bring out the coffee's natural character. It is grown and processed by a community of around 750 smallholder farmers, who deliver their cherries to the AASH–Testi Coffee Washing Station. Testi Coffee is a family-owned company well regarded for its commitment to quality.
At the station, cherries are depulped within 6 to 8 hours of harvesting, then fermented in tanks for 36 to 48 hours. The coffee is then washed in water channels until the water runs crystal clear, and the team checks by hand that no mucilage remains. Finally, it is spread on raised African beds under shade nets and dried slowly and evenly for 5 to 7 days, until it reaches an ideal moisture content of 11–12%.
