Driven by passion and genetic expertise, he pioneered a varietal program now showcasing over a dozen exceptional coffees from around the globe. The SL28 variety undergoes a remarkable transformation through a natural anaerobic process. For 200 hours, the cherries ferment in sealed bags with carefully chosen yeasts, developing a distinctive character.
The coffee is then dried on raised beds for 15-20 days and stabilized for 35 days in Grain Pro bags, the result is a complex and vibrant cup.
Expect a delightful combination of tropical flavours: Pineapple and wine gums, you can also find lovely almond, cranberry, dark chocolate, maple syrup and papaya.
