This lot comes from Gigesa village in Ethiopia's renowned Oromia region. It is grown by a community of around 500 smallholder farmers, each managing about one hectare of land, where they grow heirloom coffee varieties using organic practices. This commitment to quality not only produces outstanding coffee but also plays a vital role in the region's economic prosperity. The farms sit between 1,850 and 2,100 m.a.s.l., and this altitude provides the ideal microclimate for the coffee's complex and distinctive flavour.
Farmers deliver their cherries to the Gigesa station, where they are pre-sorted. The team hand-sorts the cherries, keeping only perfectly ripe fruit and removing any unripe, overripe or foreign material. The cherries are then floated in water: low-density, imperfect coffee floats and is removed, while healthy, dense cherries sink.
The cherries are then spread about 5 cm thick on raised African drying beds and turned 5–6 times a day. Drying takes 15 to 21 days, depending on the weather, until the coffee reaches an ideal moisture content of 11–12%.
