About the producer
Jhon Wilmer Cuéllar is a fourth generation young coffee grower that has continued his family's coffee legacy at their 10 Hectare family farm, Finca Las Brisas. Seeing his father's tireless effort, Jhon decided to help his father by learning about nutrition, yield factor, roasting and cupping at SENA - a national training service in Colombia whose function is to provide professional training and formation to workers, youths and adults within the areas of industry, trade, agriculture, mining and cattle breeding.
Jhon has worked tirelessly to optimise the coffee processes and infrastructure, including a laboratory with a roaster and mill, as well as an ecological mill. He is committed to caring for the environment and works with other farms to meet higher volumes of coffee for them, all benefiting from added value. He has also brought a wave of innovation to the farm by combining traditional coffee growing techniques with more experimental processing, whilst planting exotic varieties such as Gesha, Java, Ombligón, Aji, Pink Bourbon, among others.
About the process
All cherries are harvested by hand, sorted, and washed. After this, the cherries are fermented for an extended period of 80 hours in sealed bags then dried on parabolic beds in a marquesina (a specialised drying marquee) designed to control airflow.
