El Imposible takes its name from the national park it borders, home to a gorge so treacherous it once claimed the lives of farmers hauling coffee to the coast by mule. The crossing was so dangerous that locals simply called it "impossible," and engineers eventually had to build a series of bridges just to move coffee past it safely. That history of a hard, physical relationship with the land still shapes this coffee's producers today, smallholders working steep, hard-to-harvest slopes their families have farmed for generations. What makes El Imposible compelling isn't a single farm or technique, but a whole community, some long-standing partners, some newer arrivals, working the same unforgiving terrain and turning it into something worth the difficulty

Origin & Producers

The producers behind El Imposible are mostly individual farmers, working alone or through associations and cooperatives. Many are second, third, or even fourth-generation coffee growers. In the early 1900s, farmers hauled their coffee by mule train from the highland fincas north of the park down to the port of Acajutla on the coast. The route crossed a narrow, steep-sided gorge at what became known as El Imposible Pass, wedged between two mountains. Farmers tried spanning the gorge with makeshift bridges of their own, but these repeatedly gave way under the load, taking mules, cargo, and the men leading them down into the ravine. The danger wasn't resolved until 1968, when the government built a proper bridge at the pass, finally connecting Tacuba in the north with Cara Sucia to the south.

That resilience sits inside a much longer national story. Arabica coffee is believed to have reached El Salvador around 1740, likely brought from Africa by way of the Caribbean, though it remained a crop for local consumption for over a century. It wasn't until the mid-1800s that its commercial value was recognised, and by 1880 coffee had overtaken indigo as the country's leading export. Coffee played such a part of the countries economy that colon bills featured the coffee plan. Ahuachapán, along with Santa Ana and Sonsonate, became one of the volcanic highland regions driving that growth, but the industry's momentum was later broken by the civil war of 1979 to 1992 and the coffee leaf rust epidemics that followed, leaving many plantations across the country abandoned or repurposed. The farmers still working El Imposible's slopes today are part of the generation rebuilding from that disruption.

That rebuilding has been helped by the land itself. Beyond the park's namesake gorge, Ahuachapán's landscape of volcanoes, peaks, lakes, and rivers gives the region an agro-climatic range wide enough to support avocados, cacao, citrus, plantains, and bananas alongside coffee. Farmers fertilise their plantations in three rounds a year to keep the nutrient-rich volcanic soil productive across the whole growing cycle.

Variety & Processing

Bourbon, the heirloom variety that anchors more than 60% of El Salvador's coffee, arrived in the country in the 19th century and remains the backbone of the countries production, contributing sweetness and a rounded, chocolatey body to the traditional cup profile.

Pacas, a naturally occurring Bourbon mutation, was discovered in 1949 on a farm belonging to the Pacas family in Santa Ana, and is unique to El Salvador, prized for holding onto Bourbon's quality on a more compact, easier-to-manage plant.

Processing stays straightforward and consistent; farmers pick only ripe cherries, rest them for 12 hours before pulping, then ferment for 16 hours, adjusted for the weather on each individual farm. Drying takes place on brick or concrete patios over roughly 12 days, with farmers constantly raking to ensure even drying, down to a moisture content of 10 to 11%. The coffee then rests in warehouses for a few weeks before delivery, a settling period that helps stabilise the cup before export.

Brewing

On El Imposible shines as a classic, heavy-bodied espresso. It features low acidity and sweet brown sugar notes. For the best results, use an 18g dose, a 38g yield, and a 28-second extraction time.

On filter coffee starts with bold cocoa and sweet coconut notes. As it cools, it opens into juicy plums with a soft, bright acidity. We used 18 grams of coffee and 93°C water, yielding 270 grams in a total brew time of 3 minutes flat.
