Story
We are excited to be working with Ally Coffee once again to bring the much-loved Pau Brasil back for 2026. Named after Brazil's national tree, Pau Brasil is our core Brazilian coffee and is a celebration of the consistency, craftsmanship, and character that makes Cerrado Mineiro one of the world's most respected coffee-growing regions.
Sourced through Ally, Pau Brasil comes from producers across 55 municipalities in Minas Gerais. This naturally processed Catuai brings together the best of the region's unique terroir: a distinctive combination of climate, soil, terrain, and elevation, shaped by generations of farming expertise. Rather than a single lot, Pau Brasil is carefully curated to reflect the identity of Cerrado Mineiro as a whole; delivering a clean, balanced, and versatile cup that you can rely on year-round.
In the cup, expect notes of milk chocolate, almond, brown sugar, orange, and red apple.
Every sack is fully traceable via QR code back to the farm where it was grown, and the coffee is transparently certified under the Região Cerrado Mineiro Designation of Origin program. Contributing producers are members of cooperatives or associations affiliated with the Cerrado Coffee Growers Federation and adhere to strict standards of good practice in line with Brazilian labor laws.
Recommended brew method
This coffee is best enjoyed on espresso but it is also tasting great on batch brew, aeropress and moka pot.
Espresso: We suggest a 50% ratio for espresso, aiming for an 18gr dose and approximately 36gr of espresso out.
Filter: Drip coffee machines, pour-over, aeropress. 60gr/l ratio.
