Palestina is the newest regional lot from our import partner, Osito. Palestina sits in the southernmost corner of Huila, an area Osito have been working in since day one, purchasing outstanding microlots from a handful of producers. Having had regular requests for larger volumes, this new Palestina community lot was the perfect solution.
This particular lot was split and 20 bags sent for Ethyl Acetate decaffeination. Ethyl Acetate, a naturally occurring ester (present in bananas as well as a by-product of fermented sugars) can be isolated and used as a solvent to bond with and remove caffeine from green coffee.
