Farm Overview:
El Paraiso is a village in Huabal district, Jaén province, Cajamarca, set on top of a small mountain at 2,000 meters Farms around the village sit between 1,800 and 2,050 meters.. Huabal spans several mountains, so climate and soils vary across the district, and the harvest runs broadly from April to September.
This lot is from producers in and around El Paraiso, who pick and process their coffee themselves. After picking, cherries are rested for 24 hours before depulping, then fermented for 36 hours and dried for 10 to 15 days, typically on lined patios.
To ensure quality and financial support to coffee farmers our partner Falcon Speciality supports producers who deliver parchment in small, day-to-day lots, and each delivery goes through physical analysis and cupping at the warehouse. Once a lot is cupped, the producer receives a same-day price offer and is paid by instant bank transfer. Pricing is set as a premium over the local market price according to the physical and cup quality delivered, which keeps feedback fast and supports cash flow on farm. The support falcon has given to local farmers has risen cup score from between .5 to 3 points.
I hope you enjoy this delicious coffee.
