Process Description

We're very excited to be the only roastery in the world to bring this incredible bean to you from the legendary Finca El Paraiso in Colombia for the second time. Founded by coffee visionaries Diego and Alex Bermudez, these brothers have managed to change the face of modern specialty coffee through game-changing science and a vision for unwavering quality. Known for being the creators of the revolutionary 'thermal shock' process, Finca El Paraiso is changing the landscape of specialty coffee through industry leading research in to microbiology, biodiversity and sensory evaluation, combined with cutting edge use of technology in wet processing, drying and water treatment. Finca El Paraiso is carving a new path in specialty coffee and reinventing the wheel with amazing results. Big Jelly is not one to be missed.

This coffee is an example how modern processing techniques can be used to create a truly outstanding coffee. Once the cherries have been picked the coffee is pulped and the mucilage is removed. The mucilage is then used to create a specific culture medium that further highlights the desired aromas and flavours of the coffee. This is added to the fermentation tanks for 12 hours where the coffee is put under high pressure to continue the fermentation process under precisely controlled conditions to create a consistent and meticulously processed coffee. The coffee then goes through a thermal shock process to lock and seal the flavours in at exactly the right point of development for maximum flavour. 

The coffee is then dried in a dehumidifier to preserve the soft notes of the coffee and avoid over-oxidisation which can alter the desired flavour profile. The coffee is then stabilised and stored ready for shipping.

This precise and accurate process ensures that each and every single one of these incredible beans has achieved its full potential creating an iconic and highly memorable cup of coffee you'll want to keep coming back for.
