This special coffee is the result of a 6 years of innovation from a young and determined producer, whose competition-fodder coffees are now recognised globally.
Nestor’s secret sauce involves a ‘Mosto process’, whereby (after initial fermentation, de-pulping and washing), the coffee is submerged in leachate from a previous harvest.
The added leachate is simply the liquid released from the pulp fermentation of a previously processed coffee, adding this introduces a rich population of yeasts and bacteria which act to kickstart the fermentation (much like a starter culture when baking sourdough, or SCOBY when making kombucha).
This multi-stage fermentation results in a mega complex, layered flavour profile with all the clarity you could hope for. Don’t miss it
