This coffee is produced using Hachi’s Symbiotic Process — a fermentation method where the active fermentation culture from one coffee is used to guide the development of another. Rather than introducing external ingredients, every element comes from coffee itself, allowing the microbial ecosystem to evolve naturally while maintaining origin transparency.

Chénxī — “morning light” — captures the bright, energetic character of this lot. Juicy acidity, layered sweetness and exceptional cleanliness make it one of the most expressive coffees in the series.
