We return to Colombia with an elegant and sophisticated pink bourbon from Sebastian Gomez’s farm La Divisa in Quindio
Pink Bourbons are wonderfully complex and highly renown varietal, excelling at higher altitudes, where slower maturation allows for it’s subtle flavour and distinctive acidity to unfurl. La Divisa sits at 1700-1800 MASL and undergoes a 30 hour underwater fermentation before being pulped and washed at La Pradera, Cofinet’s principal processing hub.
Tasting like grapefruit, and floral like honeysuckle with a silky mouthfeel, making for a balanced and delicious filter, or a light and bright espresso.
