Produced by Duglas del Rosario Molina Corzo at her family farm established in 2016 in Villa Corzo, Chiapas, Mexico, this specialty coffee is grown in fertile volcanic soils along the foothills of the Sierra Madre at altitudes of 1,200 to 1,500 metres above sea level. The cherries are hand picked at peak ripeness and processed using traditional washed methods, including a controlled 12 to 17 hour fermentation followed by thorough washing and sun drying on zarandas and open yards. Crafted with painstaking attention to detail, this lot highlights the region's ideal microclimate, with slow maturing cherries yielding a clean, balanced sweetness and complex cup profile, while showcasing the vital role of female producers in shaping Chiapas's specialty coffee landscape.
