Mexico is the coffee just south of the US border that UK drinkers often overlook. Grown largely by smallholders in southern states like Chiapas, Oaxaca and Veracruz, and heavily certified organic, Mexican coffee tends to be light-bodied, gentle and easy-drinking: milk chocolate, toasted nut, soft citrus and mild acidity. High-altitude lots from Chiapas show more sparkle. It is a natural home for organic and Fairtrade bags, and its mellow profile makes it a comfortable filter and a smooth espresso base — particularly good for anyone who finds bright, acidic coffees too intense.
