Grown largely by smallholders in southern states like Chiapas, Oaxaca and Veracruz, and heavily certified organic, Mexican coffee tends to be light-bodied, gentle and easy-drinking: milk chocolate, toasted nut, soft citrus and mild acidity. High-altitude lots from Chiapas show more sparkle. It is a natural home for organic and Fairtrade bags, and its mellow profile makes it a comfortable filter and a smooth espresso base — particularly good for anyone who finds bright, acidic coffees too intense.
