In the cup we find flavours of blackberry, plum and cherry.
This is our first ever release from Jose Luis from Chevas. Him and his team are young and ambitious, with constant drive for excellence, which shows in all of their coffees we cupped this year at their farm in Panama. This natural geisha stood out on the cupping table because of its intense purple and red fruit notes and long lasting sweetness.
This geisha underwent a controlled anaerobic fermentation with saccharomyces cerevisiae, also known as bakers or brewers yeas, for 4 days. This process is designed to intensify the fruit forward characteristics of the variety, while maintaining plenty of flavour clarity and balance in the final cup.
Following the fermentation the cherries were dried in a dark room to lock in all the flavours created during the fermentation. The result is an expressive natural geisha with pronounced fruity notes and refined sweetness.
