Panama is a small origin with an outsized reputation, thanks almost entirely to Gesha (Geisha). Since a Boquete estate stunned the coffee world in 2004, Panamanian Gesha has repeatedly broken auction price records, and its washed lots are famous for an intensely floral, tea-like, jasmine-and-bergamot delicacy unlike anything else. Panama also grows excellent Typica, Bourbon and Catuai on its volcanic highlands. This is aspirational, special-occasion coffee — the bags are small, the prices high, and the experience genuinely different. Brew it gently as filter and drink it black to appreciate the aromatics.
