Some coffees are special because of where they come from. Others are special because of the people behind them. Los Nogales is both.
Los Nogales was the first coffee farm purchased by the Salaverria family and the place where José Antonio Salaverria grew up, surrounded by the fruits and crops of the farm. The name translates as “walnut tree”, after one of the crops that once grew here.
Today, the farm is a playground for experimentation, with the Salaverrias continually exploring new varieties and processing methods to create exciting, distinctive coffees. This lot has been anaerobic soaked, a carefully controlled fermentation process that brings extra sweetness and depth to the cup.
The result is beautifully sweet and comforting, with cocoa, brown sugar and honey coming through in layers. Think smooth, rich and naturally sweet, with the anaerobic process adding just enough character to make this coffee seriously interesting.
The cherries are processed at Beneficio Los Cruces, the Salaverria family's central mill. Here, modern processing equipment meets generations of experience, allowing the team to carefully control fermentation, drying and quality from cherry to finished green coffee.
Sweet, complex and full of character — this is El Salvador at its experimental best.
