El Salvador punches well above its size. The country famously preserved old Bourbon and Pacamara varieties when neighbours replanted for yield, and that heritage shows in the cup: soft, sweet and elegant, with caramel, stone fruit, almond and a mellow, balanced acidity. Pacamara in particular can be spectacular — big-bodied and syrupy with distinctive fruit. Grown on volcanic slopes in regions like Apaneca-Ilamatepec, Salvadoran coffee is refined rather than loud, which makes it a lovely filter for drinkers who want sweetness and complexity without sharp acidity. Bags are often single-estate, so you can follow a specific farm and variety — a rewarding origin for anyone ready to explore beyond the big names.
