About this Product
Country of Origin: Colombia
Variety: Red Gesha
Process: Natural Anaerobic
Altitude: 2000mASL
In the cup we find flavours of honeysuckle, peach and jasmine.
This lot from Mauricio Shattah, Finca La Negrita, comes from his high planted part of the farm. This gesha was grown in over 2000m above sea level in a valley where the lot only gets couple of hours of sunlight per day and where the cool winds influence the growing cycle. These slow down the cherry maturation, which helps to build up more sugars in the seeds for more flavour complexity and sweetness.
These are intensified by Mauricios intentional fermentation, where he first cleanses the cherries to remove any yeast or bacteria, followed by placing the cherries into a fermentation tank and innoculating with bakers yeast. This helps to kick start the fermentation and allows more control. Mauricio also flushes the tank with nitrogen to reduce astringency and to have more sweeter final cup.
This particular lot 21 is also considered as one of Mauricios competition lots. It is a great example what a coffee competitor would use in their competition and this particular one shows very similar cup quality as the one used by our Head of Coffee Roosa in 2024 when she won the UK Barista Championships using Mauricios red gesha.
