A medium roast with lovely sweet red berry notes, little hints of chocolate, vanilla, and a very smooth lingering finish. We really like this as a pour over.

Honduras, Ocotepeque, SHG, COCAFELOL
COCAFELOL was founded in La Labour, Ocotepeque, and has been working diligently on behalf of their coffee producers since 2000, providing technical and financial assistance. Its main focus is to produce, process and market high quality and differentiated coffee. They have invested heavily in organic production.
The organisation is keen to promote sustainable agricultural practices; using chromatography, they are performing sophisticated soil analyses to deduce how best to improve the quality of organic matter and what products to use. The coffee husks processed at their wet mill are combined with minerals and naturally occurring fungus and broken down into an organic compost that can be applied back to the farms. This is provided free to their members and is sold to local vegetable producers as an extra source of income. Last year(2019) they provided 30,000 bags free. The honey water (waste from processing) is also viewed as a raw material and converted in to liquid compost too. From the waste pulp and honey water they are able to create over 30 types of fertilizer. The brand that sits behind all of this was set up using the money from the Fairtrade premiums they have earned.
During harvest when the coffee is at its optimum ripeness, the product is collected manually before being sent to centralised washing stations for pulping, washing and drying process according to the quality desired.
LAS TORERAS (a contributing farm to COCAFELOL)
In 2002, Edgar Antonio Mejia Dubon, the owner of Las Toreras, travelled to the United States. He was there for four years before returning home and buying the plot of land that has become Finca Las Toreras. Coffee had been a part of the family history, and so it was natural to start cultivating coffeee to continue the tradition. It is also a labour of love for him.
Plants on the farm are shade grown, with shade provided not only by native species, but also cropping trees such as orange, peach, and avocado, as well as timber trees of cedar. Coffee, however remains his primary source of income.
Being part of COCAFELOL means that organic fertilizer is both produced and used on the farm. Coffee is exported by Beneficio San Marcos.
LAS OROPÉNDOLAS (a contributing farm to COCAFELOL)
Mr. Luis Regalado, the owner of Las Oropendolas, acquired the land where the farm is located at the beginning of 2001. The fact that he is a professional in the area of agronomy allows him to work the plot from the sowing of coffee since he has previous experience in the field. The name of the farm refers to a large number of birds of the same name that live in the timber trees of the farm.
He is a family man who continuously watches over the care of his children and wife.
He shows his passion for working in the fields with the constant maintenance he gives to the plantation. Currently, Las Oropéndolas farm has fairtrade and organic certificate, stamps that reflect Mr Luis’s commitment to the environment.
He also grows trees for timber, as well as banana, oranges, and lemons, as well as being part owner of Finca Liquidambar. Mr. Luis collects the coffee when it is mature, then it is pulped and dried at Beneficio San Marcos.
