About this Product
Mr Claus
Christmas Blend
Every Christmas needs someone steady at the centre, and that’s Mr Claus. We’ve taken our much-loved San Ignacio bean from northern Peru and paired it with something a little more mischievous from Colombia.
That Colombian lot comes from Jairo Arcila’s Santa Mónica farm in Armenia, Quindío, where Castillo grows at around 1,500 metres in rich volcanic soil. The ripe cherries spend 48 hours fermenting in sealed tanks with cinnamon. The spice works its way into the fruit before the coffee is washed and slowly dried. The result tastes like a cinnamon bun, but this is real coffee with no flavourings, just Christmas built in at the farm.
Together they make a cup that’s rich, sweet and softly spiced, like the first coffee of Christmas morning before the wrapping paper comes out. It’s lovely black and holds up beautifully with milk.
Tasting notes: cinnamon bun, cacao nib, brown sugar, a twist of lime
Origins: San Ignacio, Peru and Santa Mónica, Quindío, Colombia (Jairo Arcila)
Variety: Castillo (Colombian component)
Process: Colombian component is 48-hour anaerobic cinnamon co-ferment, then washed
