Colombiaβs Andean coffee belt β the Eje Cafetero, that lush green triangle of high-altitude growing country β has been producing coffee beans of extraordinary quality since the early eighteenth century, and the countryβs reputation for clean, well-balanced, reliably excellent Arabica is among the most deserved in the specialty world. Pure Colombia Dark Roast takes that inherent excellence and applies the transformative pressure of a darker roast profile, drawing out a different register of the beanβs considerable potential. Where the medium roast expresses Colombiaβs characteristic brightness and fruit, the dark roast deepens and darkens that picture considerably: the coffee beans emerge from the drum with a surface sheen, their natural caramel sugars caramelised to something richer, more complex, more insistent. Dark chocolate and roasted walnut lead the palate, underscored by a lingering earthiness and a finish of dried fig and burnt caramel. The body is full, the acidity pulled back to near-negligible.
