From Guinope in El Paraíso, Honduras, this washed microlot was produced by Alix Yovani Ramírez at Finca El Aguacatillo. Alix began as a farm labourer before buying his first plot in 2005, and today he manages 14 hectares of coffee. Cherries are floated, dry fermented for 16 hours, mechanically washed and dried in solar domes for 8-15 days. They’re depulped the same day they’re picked, which gives a clean, precise cup.
Grown at elevations of 1,600 to 1,650 metres, the IHCAFE 90 and Lempira varietals produce a coffee that is sweet, balanced and approachable. Expect bright lime acidity alongside red apple, with a rich maple syrup sweetness and a gentle nuttiness in the finish. It’s a comforting yet lively expression of Honduran coffee.
