From the mountains of Chiapas, Mexico’s southernmost state, this organic certified washed lot is part of Ki-Saya, a curated selection named after a Mayan phrase that combines “tasty” and “nature”. Only the best cherries are selected, then depulped and fermented for 12 to 17 hours before being washed and dried on patios. The parchment is picked over by hand before delivery, which makes for a very clean cup.
Grown at elevations of 1,200 to 1,800 metres under the shade of native trees, the combination of altitude, fertile soil and Caturra, Costa Rica, Marsellesa and Typica varietals produces a cup that is smooth, balanced and approachable. Expect rich dark chocolate and hazelnut with a creamy nougat sweetness, lifted by a bright touch of lemon. It’s a comforting, well-rounded expression of Chiapas coffee.
